What is avion tequila?

Avion Tequila is produced in the town of Jesus Maria in the highlands of Jalisco, Mexico. It is named after the Spanish word for "aircraft" as it is said to embody the spirit of flying high. The tequila is made from 100% blue Weber agave which are matured for up to seven years before being harvested. The agave is then roasted in clay ovens and fermented with yeasts imported from France. The tequila is distilled twice in small copper stills and aged in oak barrels for varying periods of time. Avion Tequila comes in several varieties including Silver, Reposado, Añejo and Reserva 44, which is a limited edition extra-aged tequila. The brand gained popularity after being featured in the TV series "Entourage" and is now owned by Pernod Ricard.
